It does not. Suggestion, for coffee and tea used filtered or bottled water. You will be amazed at the improved taste.

The default mode is quick boil, and it could not be changed, if you want to boil faster, add less water. Wish this answer could help

Yes it stays on. When the screen goes dark, the power is off.
